![]() It contained corn from Peru, potato, yam, and raw onions slices. It was divine with the aroma from the sea! This dish was very avant-garde and I enjoyed it tremendously! Next came a Ceviche of seabass macerated in lemon, a recipe inspired from Peru. This was very creative from the chef! The second dish was Crunchy anemones, on a bed of seaweed and lemongrass emulsion. The Olive Oil ice cream brought the soup to another level and made it very refreshing and layered the taste. Throughout this trip through Andalusia, we had a lot of Salmorejo, but this one was definitely a winner. Salmorejo is a recipe of the Andalusian region made with tomatoes. Though similar to a cold tomato soup, it was not gazpacho. We loved everything we had here! The feast started with the Salmorejo de Andalusia with olive oil ice cream and some drops of olive oil. Bread was excellent, the kind expected in France, and Europe too, but hard to find in the US! Since our waiter warned us not to eat too much bread (in anticipation of what to come), I really had to control myself! Spoiler alert! If you want to be surprised by the kitchen then you should stop here and just make your reservation. I had to make do with La Mancha beer, which was pretty good! We started with a basket of bread (crunchy crust, yet light and airy inside) and a hummus made with Garbanzo bean. Whole bottles are pretty cheap! But my husband does not drink and I can't work on it by myself. The chef makes it a surprise unless you ask for a specific dish. We chose the Tasting Menu of 39,50€ which consisted of 7 courses not described on the website. ![]() He was very patient and helpful having to explain everything twice, in English for my husband and in Spanish so that I could practice mine. ![]() Our waiter, I forgot to ask for his name (my bad!), was very good at describing each of our dishes. The restaurant is chic with nice white tablecloths. For our last night in Madrid, we made a reservation at Metro Bistro.
